Today, the Executive Chef of Savini is Matteo Gelmini, born near Brescia in 1983. He joined the restaurant in 2013 after many experiences in some of the most prestigious Italian and international establishments (such as Villa Fiordaliso in Gardone Riviera, Gualtiero Marchesi, Ristorante a La Palme D’Or in Cannes, Trattoria Toscana by Alain Ducasse.
For Matteo Savini is not only a brand, but more important a project that he continues to create and improve together with his team. The Chef pays particular attention to history and to the modern guests’ needs and integrates traditional flavours with innovative techniques. Each dish is an emotion of creative combinations, based upon simple flavours, with a total respect of the original ingredients.
